Again I’m starting out with my disclaimer, I don’t live that measuring life cause for me cooking is fun. As always I will try my best to explain what I did so you too can try this recipe.
Cheesy Cashew Cream
Lets’ start with the topping as it will need time to cool;
I used a handful/ 1 cup of plain cashews and soaked them in boiling water for 1 hour.
Once they have softened drain half of the water and then blend until smooth.
Now you will have this cream like substance… Giggity! Add it to a pot on a low heat as this will start to thicken quickly. If you want to keep this vegan just don’t add the cheese. But for all my non-vegans, add a hand full of grated cheddar as well as a dash of onion granules and garlic granules.
Just set this aside to cool.
Roasted Corn
This couldn’t be any easier just roast it until its golden brown with a pinch of salt.
Some pro tips: oil the pan so the corn doesn’t stick and make sure you use a pan big enough so the corn lays flat.
Red Pepper Soup
In a large pot brown off some diced onions, add a packet of smoked paprika and garlic seasoning. After 5 minutes add vegetable stock and let that simmer for another 10 minutes.
Next, add a tin of chopped tomatoes and a jar of roasted red peppers, make sure you get peppers in water and not vinegar.
Let this cook for about 30 minutes.
Once everything has become soft go in with a hand blender or any blender you have. If you like your soup chunky just skip this step, but I don’t like mine to smooth or chunky so I went for something in the middle.
Let it cook at this stage for another 30 minutes. Make sure it doesn’t get too dry, just add water if it does.
Time to add about half of the roasted corn save the rest to add on top when serving. Altogether the soup has been cooking for an hour by the time you reach this point and its ready to serve.
For the finishing touches add the cashew cream, roasted corn then I added some grated cheese and parsley. This really is a hearty soup, you need to try in these cold snowy days we are having in the UK at the moment.(or wherever you are in the world)
