Yes this is a quick recipe that I had come up with one afternoon, I really wanted a pizza but was trying to be healthy that day so I made this.
It worked out really well and tasted amazing so I want to share that with you guys today.
Now I do have to say I failed when it came to making the dough and noting down the measurements but I will do my best to explain.
First off the dough I mixed self raising and plain flour with a dash of salt and a few grinds from garlic grinder, I added warm water and mixed it by hand. I kneaded the dough for about 5 minutes then left it aside for about 10 minutes.
Then I worked on the sauces, I didn’t have much to hand I used a couple of table spoons tomato paste mixed with warm water oregano and a dash of sugar. I still felt the sauce was missing something so to get it a bit more depth I also ended up adding some balsamic vinegar. For the second one I mixed ricotta cheese with some fresh garlic, olive oil and black pepper.
I rolled out the dough in to two pizza sizes, I really didn’t want them getting soggy so I cooked them out first. I pierced the dough with a fork all over to make sure they go nice and crispy, personally I’m more into a thin base then a deep dish.
Once they where cooked I toped one with the tomato based sauce, sliced smoked mozzarella, spinach and fresh red chilli diced. On the next on I added the rest of the tomato sauce then I dropped on the ricotta mix and cubed the left over mozzarella and chili.
I baked them until the cheese had melted and for the ricotta pizza I added smoked salmon and oh they where tasty.
