Healthy Peach Tarts

I have a real problem when it comes to my sweet tooth, I cant give it up, when I try I just end up eating 6 doughnuts or one of them dime cakes. So, I’m trying to find ways to satisfy my cravings but keep the calories low.

That’s were these peach tarts come in, they are ridiculously easy to make with just a few ingredients.

First, I looked at how I could make the crust of lighter so I thought of filo pastry, its the healthier option as it has no fat compared to puff or shortcrust pastry.

Once you take it out of the packaging fold it into a small square then cut off all the sides so you end up with single sheets.

Now to get the pastry crispy and to hold the filling you do need to layer them, to get the layers to stick I used vegan butter with a little bit of water and nutmeg.

In-between two layered sheets I would put the mixture I find about 4-5 layers are thick enough to hold the filling and not get soggy.

Once, the muffin tray was filled I baked the crust on its own for 10 minutes until it was a light brown, and it started to crisp up. Allow that to cool slightly then we move on to the filling.

All you need for the filling is some peaches in juice, drained and chopped and some low-fat custard. So simple right I told you.

Just layer the custard and peaches till each crust is filled and then bake for 25- 30 minutes till they have set.

Allow them to cool then top with some whipped cream, but that’s just me being extra. I really hope you try this recipe out. They are so yummy and simple if your not a confident baker you can’t get this wrong.
